James Sanders, chef-owner of Sanders BBQ Supply Co., announced his plans to open a Hyde Park location to Crain’s Chicago Business yesterday:
“Days after the New York Times named Sanders BBQ Supply in Beverly one of America’s 50 best restaurants, chef-owner James Sanders tells Crain’s he’s gearing up to open another Chicago restaurant — this time with an elevated twist.
The new Sanders BBQ Prime will fill space underneath The Promontory, a bi-level music venue in Hyde Park. Sanders says the restaurant should open in about six months and will be much bigger than the existing business. He describes it as becoming his ‘signature restaurant.'”
The Sanders BBQ Supply Co. menu features meats by the 1/2 pound or individually (brisket, pulled pork, pork ribs, beef ribs, rib tips, chicken wings, sausage links, chopped brisket, oxtails, and oxtail gumbo), sandwiches (brisket, pulled pork, jackfruit, and smoked cheeseburger), seafood (catfish and fish sandwich), sides (fries, elote, mac and cheese, beans, cole slaw, potato salad, collard greens, and cornbread), a mixed green salad, platters for up to eight people, and desserts (brown butter bourbon cookies).
In naming Sanders BBQ Supply Co. as one of the nation’s best 50 restaurants, the New York Times wrote, “One of the most irresistible Southern dishes in the country right now can be found in the Beverly neighborhood of Chicago, about 12 miles south of the Loop and 530 miles north of Memphis. It’s the oxtail gumbo at Sanders BBQ, a soup-stew special whose spoon-coating gravy one can only hope is eventually available by the pint. Like all of the meat on the menu, the gumbo carries the whiff of hardwood smoke. The owner James Sanders’ staff, notably the pitmaster-chef Nick Kleutsch, is smoking some of the best barbecue outside Texas. In the process, Mr. Sanders advances a local barbecue tradition that dates to the Great Migration. Don’t skip the rib tips, the peach tea-smoked chicken wings or, if you’re here in the summer, the cucumber-watermelon salad.”
The new Sanders’ location will be in the former Promontory restaurant space at 5311 S. Lake Park Avenue West in Hyde Park.
