James Beard Award-Winning Chef Erick Williams is pleased to announce Daisy’s Po-Boy and Tavern’s “Gumbo For Good” program, which features five of Chicago’s all-star chefs and their take on the warm Southern favorite. Driven by the success of the restaurant’s recent oyster collaboration, the promotion takes place every Wednesday from January 10th through February 7th. Proceeds will be donated to Williams’ recently launched Virtue Leadership Development Program, a not-for-profit incubator created to serve as a vehicle to equip local young adults of color with the necessary skills to learn value-driven entrepreneurship through training at Virtue restaurant.
Beginning on January 10th and available alongside Daisy’s regular New Orleans-style menu, the lineup includes:
- January 10th | Jimmy Bannos, Heaven on Seven
- January 17th| Brian Jupiter, Ina Mae Tavern / Frontier
- January 24th| Paul Fehribach, Big Jones
- January 31st | Darnell Reed, Luella’s Southern Kitchen
- February 7th | D’Andre Carter, Soul & Smoke
Along with “Gumbo for Good,” January kicks off Mardi Gras season and Daisy’s is the place to begin celebrations. Saturday, January 6th is National King Cake Day, where the restaurant will feature the traditional New Orleans colorful pastry ($7) by Virtue’s pastry chef Becky Pendola through February 12th.
Daisy’s also continues its live music the first Wednesday of each month with the exception of January being the second Wednesday, January 10th from 6:30 p.m. to 9 p.m.
The restaurant’s lively atmosphere is the perfect spot to escape winter in Chicago and party into Mardi Gras season!

Daisy’s is a fast casual spot named after Williams’ late aunt Daisy who married his uncle Stew, a man with Louisiana roots and a passion for good food. Daisy and Stew shared 49 years of marital bliss and forever changed the way that Williams would see Cajun and Creole meals. Though the Great Migration has changed the way some of these meals are produced in the North, the love with which our po’boys are prepared is consistent with the love in the place of their origin.
