EAF is teaming up with food sustainability organization Next Bites and one of our favorite places, the Currency Exchange Café, located in the Arts Block in the historic Washington Park neighborhood on the south side of Chicago. Through the Sustainability Assistance Program at Next Bites, 4th year UChicago students Casey Mulroy and Nora Hardy will conduct an environmental audit of the café’s practices, including already-existing composting and sustainable sourcing, and create a sustainable business plan. In collaboration with Next Bites’ partner Verde Solutions, the team will develop recommendations for energy and water conservation, waste management and sustainable sourcing with local urban farms. EAF is excited and honored to work with the Currency Exchange Café, a leader in community engagement and sustainability through the reuse of existing space, repurposing of materials for construction and design, support of local farms and artists, and composting of food waste.
